  • 12 oz shrimp
  • 3 stalks scallion
  • 1 tsp salt
  • 1 tsp white pepper
  • 1 tsp Chinese five-spice
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 egg
  • 1 tbsp Sichuan peppercorn
  • ginger

Spicy Sauce

  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp Chinese dark vinegar
  • 1 tsp white pepper
  • 1~4 tbsp chili oil 1~4 tbsp depends on the spiciness level
  • Sugar

Instructions

To make wonton in chili sauce, here are some easy steps to follow and tease your tastebuds

Juicy Pork & Shrimp Wonton Filling

Step 1

Just chop off the white part of the scallion and put it in a container with a few ginger slices and 1 tbsp of Sichuan peppercorn. Pour in 1 cup of boiling hot water and let it soak for about 5 minutes. This spiced water will be used to marinate the pork filling.

Step 2

Chop 12oz of shrimp into small pieces. Just a heads up, ensure the shrimp is fully deveined; otherwise, it might taste poorly.

Step 3

Add 1.5 pounds of ground pork and some chopped shrimp in a bowl. For flavor, sprinkle in 1 tsp of salt, 1 tsp of white pepper, 1 tsp of Chinese five spices, 1 tbsp of oyster sauce, 1 tbsp of soy sauce, and 1 tbsp of sesame oil. And remember to crack 1 egg into the mix!

Step 4

Drain out the spiced water and pour ⅓ cup into the pork mix. Stir it until the pork soaks it all in, then add more. (You can do this thrice, adding ⅓ cup each time.) Once you’ve added all the water, give it a good mix.

Step 5

Add 2 tablespoons of cornstarch to the filling and mix well. Then sprinkle some chopped scallions and pour hot oil over them. Mix until the scallions’ oil is fully absorbed.

Wrapping Wontons

Step 6

Put a teaspoon of filling right in the middle of the wrapper.

Step 7

Just dip your finger in water and wet the sides of the square. The water acts like glue, making the sides stick together.

Step 8

Fold it in half, then wet one of the bottom corners, twist it, and stick it together with another corner.

Cooking Wontons

Step 9

To cook wontons, boil some water in a pot and toss in the wontons. Give it a gentle stir and make sure they don’t stick to the bottom.

  • When the water starts boiling again, add a cup of cold water. This way, the wonton can keep cooking without the skin breaking from the high heat.
  • Do this whole thing twice. Once all the wontons float, turn off the heat and drain the water.

Step 10

In a bowl, add 1 tbsp of oyster sauce, 1 tbsp of soy sauce, 1 tbsp of Chinese dark vinegar, a sprinkle of sugar, 1 tsp of white pepper, and a few tbsp of chili oil – as much as you like for that extra spice. You can go for around 4 tbsp, which gives it a nice spicy punch.

Step 11

Just pop the wontons in the sauce bowl, mix them up nicely, sprinkle some scallions on top, and it’s time to eat and enjoy!
