  • Rice vinegar, 1 tablespoon 
  • Garlic (crushed), 1 clove 
  • Fresh red chile (finely chopped), 1 small 
  • Coriander leaves (Chopped), 1 tablespoon 
  • Lime juice (plus wedges to serve), 1⁄3 cup

Step 1

Sugar and vinegar can be combined in a small frying pan and stirred until sugar dissolves.

Step 2

Cool, then add the remaining ingredients to the sauce.

In a small pan over low medium heat, dry roast peppers and peppercorns for 2 minutes or until fragrant, then cool.
