How To Make Parker’s Barbecue Boiled Potatoes

This is a really tasty side dish that can be served in a number of different ways, depending on what the main course will be. You could serve them with ribs or beef brisket and your guests will love them! If you are having chicken or pork chops or something lighter, they taste fantastic just by themselves as well. They also work great if you’re making an all-American style meal but want to add some variety.

Ingredients

  • Potatoes (Finely Peeled), 2 Lbs 
  • Butter, ½ Cup
  • Kosher Salt, 1 teaspoon
  • Freshly Ground Black Pepper, ½ teaspoon

Instructions

Step 1

Add 2 lbs of potatoes to a large saucepan and cover the potatoes with enough water.

Step 2

Add 1 teaspoon of Kosher salt and 1/2 teaspoon of freshly ground black pepper. Add butter and bring to a boil, then lower the heat to a gentle simmer.

Step 3

Cook the potatoes for 20 minutes to 30 minutes until they are tender enough to be pierced with a fork. 

Step 4

Continue stirring until the liquid has reduced and the potatoes are finely broken as desired and the heat has been raised to boiling. Normally, this will take no more than ten minutes. 

Step 5

Once cooked, remove the stewed red potatoes from the heat and serve hot.
