How To Make Half Runner Green Beans
This half-runner green beans recipe is a quick and easy dish that goes great with any meal. It’s an excellent way to add color, flavor, and nutrients to your plate. The best part is it takes very little time to make!
- Extra virgin olive oil, 1 tablespoon
- Red medium onion (finely diced), ½ cup
- 1 ham hock
- Garlic cloves (finely minced), 2 tablespoon
- Green beans (trimmed and snapped in half), 1 1/2 pounds
- Chicken broth, 1 cup
- Lukewarm water, 2 cups
- New potatoes (quartered), 1 pound
- Additional ham (chopped), 1 cup
- Kosher salt (to taste)
- Freshly ground black pepper (to taste)
Over medium heat, pour one tablespoon of extra virgin olive oil into a dutch oven. In the absence of EVOO, you can use any type of seed oil.
Stir in finely chopped onion and minced garlic when the oil is hot enough. Cook for 5 minutes until the onions are translucent.
Combine green beans and 1 ham hock with the garlic onion mixture.
Add 2 cups of lukewarm water to 1 cup of chicken broth. Less water may be needed. Make sure the beans are completely covered with water and broth.
Once the mixture has boiled, reduce the heat to a simmer. Put a lid on the Dutch oven and let it cook for 40 minutes or until the liquid mixture turns a deep brownish green color and the beans are well seasoned.
During simmering, add 1 pound of quartered-cut potatoes and another 1 cup of chopped ham.
Place back into the Dutch oven once again, after removing from heat and discarding the ham hock and bone.
It’s time to enjoy the half-runner green beans. Strain the liquid with a slotted spoon and enjoy!
