Ingredients

  • Ground Lamb, One Pound
  • Medium Chopped Onion, One 
  • Chopped Celery, Two Stalks
  • Quick-Cooking Barley, Three-Fourth of a Cup
  • Diced Tomatoes, One Can
  • Vegetable Broth, Five Cups 
  • Garlic Cloves, Two Diced 
  • Small Zucchini, Two Diced 
  • Frozen Mixed Vegetables (Peas, Carrots, Beans, Corn), Ten Ounces
  • Bay Leaf, One Large 
  • Thyme, One-Fourth of a Teaspoon
  • Greek Oregano, One-Fourth of a Teaspoon
  • Dried Parsley, One-Fourth of a Cup
  • Salt, to Taste. Skip if your on the DASH Diet
  • Pepper, to Taste

Instructions

Step 1: 

Pour oil into a large pot. Turn the heat to medium. Stir in celery stalks and chopped onions. Continue stirring occasionally. Cook the lamb until it is brown. Let the fat drain from the pot. 

Step 2: 

The tomatoes should be added now. Garlic, bay leaf, vegetable broth. Allow the ingredients to simmer and broil. Once you see bubbles forming and the broth starts bubbling, stir the pot to ensure the spices are evenly distributed.  

Step 3: 

Combine the barley, zucchini, frozen vegetables, thyme, oregano, and parsley. Cook the ingredients together. Let them simmer for 30 minutes.

Step 4: 

Depending on your taste, add salt and pepper. Adjust as necessary. You should cook it until you reach the desired consistency and texture. It is best served with pita bread or toasted bread.
