Ingredients
- Trader Joe’s frozen falafels, 2
- Sweet potato, 1/4
- Arugula or greens choice, 1 cup
- Cucumber, 1/4
- Tomatoes, 5 cherry
- Your choice grains; ex: brown rice, bonanza rice, quinoa white rice, 1/4 cup
- Hummus, 2 tbsp
- Tzatziki, 2 tbsp
- Dressing choice; I really like Trader Joe’s green goddess dressing, 1 tbsp
- Salt for seasoning
- Pepper for seasoning
- Paprika, 1/2 tsp (not necessary but can be used to season potatoes)
- olive oil for sweet potatoes, 1/2 tbsp
- Pita crisps (Optional)
Instructions
Step 1
Set the oven to 425°F.
Step 2
Cut the sweet potatoes into small cubes and toss them with 1/2 tbsp of olive oil, salt, pepper, and paprika. When the oven is preheated, spread them on a baking sheet and bake them. Let them bake for about 10-15 minutes, or until they are crispy.

Cook your grains according to the package instructions.
Step 4
Put your falafels on a plate and microwave them for one minute.
Step 5
Slice your tomatoes and cucumbers. If you like, you can add other vegetables as well. It really just depends on your preferences whether you add corn or bell pepper.
