Ingredients

  • Brown rice penne pasta, 1/2 cup 
  • Broccoli (Chopped), 2 cups
  • Kale (Chopped), 1 cup 
  • Garlic (Minced), 2 cloves 
  • Extra virgin olive oil, 2 tsp 
  • Black pepper, 1/8 tsp 
  • Salt + Salt for pasta water, 1/4 tsp 

Instructions

Step 1

Make sure you have all the ingredients.

Step 2

Set a pot of salted water on the stove to boil. Add the pasta to the boiling water and cook for 3 minutes less than the package instructions.

Step 3

Pasta should be drained and rinsed with cold water (this keeps it from becoming too soft). Save half of the pasta water.

Step 4

Steam broccoli for about five minutes.

Step 5

Olive oil should be added to a preheated pot along with minced garlic.

Step 6

Stir in the broccoli, pepper, and half of the salt. Sauté for a few minutes.

Step 7

Add kale and precooked pasta, along with 1/2 teaspoon of olive oil and remaining salt. Cook for around three minutes.

Step 8

Sprinkle with 1/2 tsp of olive oil and serve.

The garlic broccoli and kale could even be made ahead of time, and you could cook the pasta fresh and combine it with the pre-prepared vegetables when you are ready to eat.
