This recipe makes one loaf of bajan sweet bread but you can easily double it if needed.

It’s made with flour, sugar, baking powder and salt, eggs and butter. This dough can be baked plain or filled with raisins or nuts to form rolls.   • All purpose flour, 3 cups
  • Baking powder, 1 tablespoon
  • Salt, 1/4 teaspoon
  • Sugar (for garnish), 1 tablespoon
  • Ground cinnamon, 1/2 teaspoon
  • Ground ginger, 1/2 teaspoon
  • Ground cloves, 1/4 teaspoon
  • Unsalted butter (softened), 1/2 cup
  • Sugar, 1 cup 
  • Evaporated milk, 1 cup 
  • 1 egg (beaten)
  • Vanilla extract, 2 teaspoons
  • Tutti frutti / candied fruit, 1 cup
  • Raisins, 1/2 cup
  • Dessicated grated coconut, 2 cups 
  • 6 glace cherries (for garnish)


Step 1

Preheat the oven to 325 degrees. Spray two loaf pans with nonstick cooking spray. Combine flour, ginger, baking powder, cinnamon, salt, and cloves in a large bowl.

Step 2

Blend together the butter, sugar, milk, egg, and vanilla in a small bowl. Stir together the wet and dry ingredients.

Step 3

Combine tutti frutti, raisins, and coconut using a rubber spatula.

Step 4

Make an even layer on top by evenly dividing the batter between the two prepared loaf pans. 

Step 5

Place three glace cherries evenly spaced on each loaf. Place in the oven for 45 minutes.

Step 6

Mix 1 tablespoon sugar with 1 tablespoon water. Combine well. Use a pastry brush to apply to the top.

Step 7

Bake for 3 minutes more in the oven. Remove from the oven and let cool for 10 minutes. Slice the bread after it has cooled completely.
