- All purpose flour, 3 cups
- Baking powder, 1 tablespoon
- Salt, 1/4 teaspoon
- Sugar (for garnish), 1 tablespoon
- Ground cinnamon, 1/2 teaspoon
- Ground ginger, 1/2 teaspoon
- Ground cloves, 1/4 teaspoon
- Unsalted butter (softened), 1/2 cup
- Sugar, 1 cup
- Evaporated milk, 1 cup
- 1 egg (beaten)
- Vanilla extract, 2 teaspoons
- Tutti frutti / candied fruit, 1 cup
- Raisins, 1/2 cup
- Dessicated grated coconut, 2 cups
- 6 glace cherries (for garnish)
Instructions
Step 1
Preheat the oven to 325 degrees. Spray two loaf pans with nonstick cooking spray. Combine flour, ginger, baking powder, cinnamon, salt, and cloves in a large bowl.
Step 2
Blend together the butter, sugar, milk, egg, and vanilla in a small bowl. Stir together the wet and dry ingredients.
Step 3
Combine tutti frutti, raisins, and coconut using a rubber spatula.
Step 4
Make an even layer on top by evenly dividing the batter between the two prepared loaf pans.
Step 5
Place three glace cherries evenly spaced on each loaf. Place in the oven for 45 minutes.
Step 6
Mix 1 tablespoon sugar with 1 tablespoon water. Combine well. Use a pastry brush to apply to the top.
Step 7
Bake for 3 minutes more in the oven. Remove from the oven and let cool for 10 minutes. Slice the bread after it has cooled completely.
