We’ve tried each type of Willie Mae’s fried chicken recipe and now have perfected our very own recipe! This recipe is so easy to make and takes very little time to prepare.
Ingredients:
For the Brine:
- Coca-Cola, 5 Cups
- kosher salt, 1 tablespoon
- Fresh thyme leaves, 10 sprigs
- Garlic (Peeled and Sliced into Bits), 4 cloves
- Mild hot sauce, 4 teaspoons
- Chicken thighs , 8 to 12 (about 2 pounds)
For the Seasoned Flour:
- All-purpose flour or self-rising flour, 3 cups
- Kosher salt, 1 tablespoon
- Ground black pepper, 2 teaspoons
- Smoked Spanish paprika, 2 teaspoons
- Garlic powder, 1 ½ teaspoon
- Onion powder, 1 ½ teaspoon
- Cayenne pepper, 1 teaspoon
For the frying:
- Peanut oil or Olive oil, 3 cups
- Lard (optional), 1 cup
Step By Step Instructions To Make Willie Mae’s Fried Chicken
Preparing The Brine
Step 1
Add five cups of Coca-cola to a large metal bowl along with kosher salt.
Step 2
Coke and salt should be stirred together until completely dissolved.
Step 3
Garlic cloves, fresh chopped thyme, and hot sauce should be added. Stir thoroughly. Your brine is now ready.
Step 4
The chicken thighs can now be added. Finely massage them with your hands. Put the metal bowl in the refrigerator for three to five hours to marinate. Cover the bowl with plastic and place it in the refrigerator.
Preparing the seasoned flour:

A willie Mae’s fried chicken’s crispiness and crust depend on its seasoning. Take a wide shallow dish or plate to do this. Distribute 3 cups of self-rising flour evenly over the dish.
