- Egg noodles, 2 1/2 cups
- Olive oil, 3 Tbsp.
- Garlic, 3 cloves
- Onion, 1
- Celery stalks, 4
- Carrots, 4 large
- Water, 12 cups
- Chicken bouillon cubes, 2
- Bay leaves, 2
- Fresh parsley, 4 Tbsp.
- Salt, 1/4 tsp. (adjust to taste)
- Pepper, 1/4 tsp. (adjust to taste)
Slice one onion and three garlic cloves. Chop four celery stalks and four large carrots.
In a large heavy-bottomed soup pot or Dutch oven, heat 3 Tbsp olive oil. Garlic, onions, celery, and carrots are added along with a pinch of salt and pepper. Cook until soft (about 6 minutes).
