How to make a Santa Fe Soup Recipe

Santa Fe Soup is a hearty, hearty winter soup that kids will love. This soup is made with chicken, beans, potatoes, and seasonings. This soup is also vegan and gluten-free. It can also be made low carb by omitting the potatoes and leaving out the carrots.

Ingredients

  • Ground beef, 1 1/2 lbs 
  • Onion, 1 (chopped)
  • Green pepper, 1 (chopped)
  • Garlic, 3 cloves (finely chopped)
  • Salt and pepper to taste
  • Cumin, 1/2 teaspoon 
  • Pinto beans, 1 can (undrained)
  • Black beans, 1 can (undrained)
  • kidney beans, 1 can (undrained)
  • Green chilies, 1 can (chopped)
  • Whole kernel corn, 1 can (drained)
  • Petite diced tomatoes, 1 can
  • Taco seasoning, 1 package 
  • Ranch dressing mix, 1 package 
  • Cheese (for garnishing)
  • Lime (for garnishing)

Instructions

Step 1

In a large skillet, add ground beef, onion, green pepper, garlic, salt, pepper, and cumin. Cook for 7-10 minutes, or until beef is browned and onion and green peppers are tender.

Step 2

Pour beef mixture into the slow cooker and stir in beans, green chilies, corn, tomatoes, taco seasoning, and ranch dressing mix.

Step 3

Cook on low for 2-3 hours.

Step 4

Serve up hot with fresh squeezed lime juice and cheese sprinkled on top!
