Santa Fe Soup is a hearty, hearty winter soup that kids will love. This soup is made with chicken, beans, potatoes, and seasonings. This soup is also vegan and gluten-free. It can also be made low carb by omitting the potatoes and leaving out the carrots.
- Ground beef, 1 1/2 lbs
- Onion, 1 (chopped)
- Green pepper, 1 (chopped)
- Garlic, 3 cloves (finely chopped)
- Salt and pepper to taste
- Cumin, 1/2 teaspoon
- Pinto beans, 1 can (undrained)
- Black beans, 1 can (undrained)
- kidney beans, 1 can (undrained)
- Green chilies, 1 can (chopped)
- Whole kernel corn, 1 can (drained)
- Petite diced tomatoes, 1 can
- Taco seasoning, 1 package
- Ranch dressing mix, 1 package
- Cheese (for garnishing)
- Lime (for garnishing)
In a large skillet, add ground beef, onion, green pepper, garlic, salt, pepper, and cumin. Cook for 7-10 minutes, or until beef is browned and onion and green peppers are tender.
Pour beef mixture into the slow cooker and stir in beans, green chilies, corn, tomatoes, taco seasoning, and ranch dressing mix.
Cook on low for 2-3 hours.
Serve up hot with fresh squeezed lime juice and cheese sprinkled on top!
