Most people have a hard time producing a recipe that tastes good, capturing the essence of the product, and showing it in a way that is both appetizing and easy to make. A few years ago, I discovered a little-known ingredient called malted milk balls. It was basically an extremely good food for baking that can actually be made from the same ingredients as regular milk.

This is a new and fun Malted Milk Balls Recipe that I’ve just been enjoying. It is based on a real recipe I’ve had that I didn’t want to give away but my friends will be able to make as well. Malted milk is an ingredient that you can get at a grocery store. If you don’t have it you can use 2% milk and 2% whole milk. The recipe calls for an instant vanilla extract or a vanilla bean. You can use it to couple with any recipe too so I have included some recipe ideas below.

How To Make Malted Milk Balls

In this post, we will be looking at the method of making malt milk balls. Making malt is quite a process and involves the use of a number of different ingredients. The malt must be heated gently, and only then is it possible for it to be sweet and soft. The malt, then, has to be mixed with hot water, and the mixture has to be cooled down until it becomes cold. Once the mixture is cool, it has to be evenly mixed and spread over a surface in layers.

Ingredients

  • White chocolate chips, 10 oz
  • Malted milk powder (King Arthur or Briess), 5 tbsp 
  • Pilsner DME (dehydrated malt extract, available at your local homebrew shop) , 2 tbsp 
  • Salt (flaked), 1 tsp 
  • Unsweetened cocoa powder, 1 tsp
  • Crushed meringue cookies, 1 cup 
  • Dark chocolate melting chips, 8 oz (for dipping)

Instructions

Step 1

The powders should be mixed and sifted into a dry bowl.

Step 2

Make sure the white chocolate is well melted before serving in a microwave-safe dish (don’t overheat or the chocolate will dry out).

Stir in 1 tbsp at a time of the sifted malted milk, cocoa, and DME powders until smooth.

Step 4

Until well combined, fold in meringue and salt.

Step 5

Mixture should be rolled into balls of 12 inches and placed on a parchment-lined baking pan.

After resting for a few minutes in the freezer, remove.

Step 6

During the resting time, melted chocolate chips are melted in a double boiler or microwave until smooth.

Malted milk balls are dipped in melted dark chocolate after being pulled out.

Step 7

Put parchment paper on a baking sheet.

Step 8

For the malted milk balls to harden, you’ll need to let them rest in the refrigerator for at least 10 minutes.

Step 9

It is best to serve the dish immediately or to store it in an airtight container in a cool, dark place.
