  • Black pepper, 1/8 teaspoon
  • White pepper, 1/4 teaspoon
  • Garlic powder, 1/4 teaspoon
  • Salt, 1 1/2 teaspoons
  • Sugar, 1/2 teaspoon
  • Soy sauce, 1 tablespoon
  • Shaoxing wine, 1 tablespoon
  • Sesame oil, 1 teaspoon
  • Egg, 1
  • Cornstarch, 1 tablespoon
  • All-purpose flour, 2 tablespoons
  • Oil (for frying)

Instructions

Step 1

In a large mixing bowl, combine chicken wings, black pepper, white pepper, garlic powder, salt, sugar, soy sauce, Shaoxing wine, sesame oil, and egg. Combine everything until the wings are well coated. Continue to mix until the wings are coated with cornstarch and all-purpose flour.

Step 2

For the best results, marinate the wings for 2 hours at room temperature or overnight in the refrigerator. (If you refrigerate the wings, make sure they come back to room temperature before cooking).

Step 3

If there is liquid in the bowl after marinating, mix them thoroughly again. Coat them well with a batter-like coating. You can add a bit more cornstarch or flour if it still looks too watery.

Step 4

Fill a medium pot about 2/3 full of oil, and heat it to 325 degrees F.

Step 5

Fry the wings in small batches for five minutes and remove them to a paper towel-lined sheet pan. Once all of the wings have been fried, return them to the oil in batches and fry again for 3 minutes.

Step 6

Drain on paper towels or a cooling rack, then serve with hot sauce!
