Ingredients
- Black Beans, 1/2 lb
- Water, 4 cups
- Green Peppers, 1½
- Onion, 1
- Cloves Garlic, 3
- Bay leaves (Dried), 3
- Salt, 1 teaspoon
- Garlic powder, 2 teaspoon
- Oregano, 1 teaspoon
- Cumin, 1 teaspoon
- White vinegar, 1 teaspoon
- Salt (to taste)
Instructions
Step 1
Fill the pressure cooker with two cups of water and add the beans. Soak the beans for at least four hours.
Step 2
When the beans have been soaked for four hours, add the remaining two cups of water. Add a half pepper and a quarter onion to the pot.
Step 3
Add the garlic powder, bay leaves, and 1 tsp salt. When the pot reaches pressure, cook for 25 minutes on high heat.
Step 4
To make a sofrito, dice half an onion, half a pepper, and three garlic cloves. Over medium-high heat, place a tablespoon of olive oil in a pan. As soon as the oil is hot, add the diced onions, peppers, and garlic and cook for about 3-5 minutes, until soft. Remove from the pan and set aside.
Step 5
Release the pressure from the pressure cooker after the beans have been cooking for 25 minutes. Pour the salt, sofrito, cumin, and oregano over the beans and mix well.
Step 6
Cook the beans for another 15-20 minutes after bringing them to a boil.
Step 7
