  • Butter, 2 tablespoons 
  • Onion, 1/2 cup (chopped)
  • Flour, 1 tablespoon 
  • Half-and-half, 2 1/2 cups 
  • Frozen corn, 2 (16 ounces) packages (thawed, rinsed, and well-drained)
  • Anaheim chilies (or Jalapeno), 2 tablespoons (diced) 
  • Salt, season to taste
  • Cayenne pepper, season to taste
  • Sugar, 1 tablespoon 
  • Parmesan cheese, 2/3 cup (grated)
  • Gruyere cheese, 1/4 lb (shaved pieces for top)


Step 1

Melt butter in a large skillet or saucepan. Over high heat, add onions and sauté until soft, about 2 to 3 minutes.

Step 2

Stir in flour and cook for 1 minute, then add half-and-half gradually. Bring to a boil over medium-high heat, whisking often until thickened.

Step 3

Stir in the well-drained (and thawed) corn and chiles and bring back to a boil. Add seasoned salt, cayenne pepper, sugar, and 1/3 cup Parmesan cheese.

Step 4

Place in a shallow 1 1/2-quart baking dish. Top with Gruyere cheese pieces and the remaining 1/3 cup Parmesan cheese.

Step 5

To melt the cheese and make the top golden, bake in a preheated 350-degree oven for 10 to 15 minutes (under the broiler for a minute or two). Garnish with sliced jalapenos.
