Ingredients
FOR THE SUSHI ROLL
- Sushi Rice, 1 Cup
- Nori, 4 Sheets
- Water, 1 1/2 Cup
- Rice Vinegar, 3 Tablespoon
- Salt, 1/2 Teaspoon
- Sugar, 2 Tablespoon
- Food Coloring – green and red
- Everything But The Bagel
FOR THE FILLING
- Avocado (scooped and sliced), 1
- Mini Cucumbers (peeled and sliced into cubes or sticks)
- Carrots (either in sticks or small chunks)
- Shrimp (Peeled Deveined and Tails off Cooked), 6
- Crab Meat Chunks, 16 pieces (Cut in ½)
- Sweet Baby Ray’s Secret Dipping Sauce
Instructions
Step 1
Place the sushi rice (or short grain) in a mesh sieve and rinse until the water runs clear. Put the water and rice in a pot and bring to a boil. After the rice has boiled, cover it.
Step 2
Reduce the heat and let the rice absorb all of the water. Prepare the Rice Vinegar mixture while the rice is cooking.
Step 3
Add rice vinegar, sugar, and salt to a small saucepan over medium heat. Make certain that both the salt and sugar dissolve, and then remove from heat. Cool in the refrigerator while the rice is still cooking.
Step 4
Let’s go back to the rice. After the water has been absorbed, mix once more to move the rice and separate it a bit. The rice vinegar should be taken out of the refrigerator and spread throughout the rice. Do not overmix, as the rice will appear sticky.
Step 5
Divide the rice into three portions. (You will make three rolls, but color them only green and red. To make this easier, I suggest you still separate into 3 bowls, one red, one green, or vice versa. I do this just to make portioning easier. ) Each portion will make 1 sushi roll.
Step 6
Place one portion in each of the three bowls. Color each bowl separately. One should be green. Another should be red. And the third will either be red or green. Be sure to use a separate fork for each color of rice. Add a few drops (as many or as few as you prefer). Combine.
Step 7
Next, move on to the next bowl. Set up the bowls of colored rice to roll the sushi rolls. Wrap the bamboo sushi mat in plastic wrap before you start rolling. Next, dip either your rice wooden flattening spoon or your fingers into some water.
Step 8
Spread the Nori wrapper out. After that, add a scoop of colored rice to the wrapper. To make three, repeat this process 3 times using all three bowls. Be sure to flatten it (the Shamoji paddle works well).
Step 9
Once the Nori is covered, place the plastic-coated bamboo mat on top. Flip it over so the wrapper is facing you, not the rice.
Step 10
Make a line about 1″ up from the start of the long side of the roll. Roll, crimp to hold it together, and roll again until you reach the end of the roll. If anything falls out, you can always tuck it in again. Cut it in half.
Step 11
Add a shrimp to the top. Sprinkle Sweet Baby Ray’s Sauce on top for a little tang and bite!
Step 12
Repeat steps 8-11 for each sushi roll.
Step 13
Serve and Enjoy!
