How To Make Sweet Potato Cobbler
In the South, grandmothers have their own variations of sweet potato cobbler in their family recipes. As in this recipe, a batter of flour, baking powder, sugar, and milk is layered over cooked sweet potatoes, and a vanilla and cinnamon-flavored syrup is drizzled over the top. Bake the mixture until it turns golden brown and bubbles.
- Sweet potatoes (sliced) , 8 cups
- lightly salt water
- White sugar, 2 cups
- Flour, 4 tablespoons
- Cinnamon, 1 tablespoon
- Ground nutmeg, 1⁄2 teaspoon
- Ground cloves, 1 dash
- Unsalted butter, 1⁄2 Cup
- Crust pie crust, 1 double
- Milk, 2 tablespoons
- Sugar, 1 tablespoon
- Pecans (chopped), 1⁄4 cup
In a large skillet, cover sliced sweet potatoes with lightly salted water. Boil, then reduce heat to a simmer.
Cook for 7 minutes or until the vegetables are tender but still firm. Reserve 2 cups of the cooking liquid.
Stir together the reserved 2 cups liquid, sugar, flour, cinnamon, nutmeg, and cloves in a medium saucepan over medium heat. Keep stirring until the sugar dissolves.
Melt the butter. Add the syrup to the sweet potatoes and cook over medium high heat until the syrup bubbles up and covers the potatoes.
Take out of the heat.
Slice the sweet potatoes and layer them in a glass dish 8×10 inches. Pour the syrup over the potatoes.
Pastry should be cut lattice-style and topped with cobbler. Brush with milk, sprinkle with sugar, nuts, and bake at 400 degrees for 20-25 minutes.
