  • Chicken breast halves, 4 
  • Olive oil, 1 tablespoon
  • Salt and pepper (to taste)
  • Monterey Jack and cheddar cheeses (shredded), 3/4 cup
  • Fresh cilantro sprigs, 4 

For The Ranchero Sauce:

  • Olive oil, 1 teaspoon
  • Onions (sliced), 1 cup
  • Garlic (minced), 1 teaspoon
  • Celery (diced), 1/2 cup
  • Green bell pepper (sliced), 1/2 cup
  • Red bell pepper (sliced), 1/2 cup
  • Jalapeno or serrano pepper (diced), 1/2 teaspoon
  • Thyme leaves, 1/4 teaspoon
  • Bay leaf, 1 
  • Red chili flakes or cayenne pepper, 1 pinch
  • Fresh cilantro (minced), 1/4 cup
  • Diced tomatoes, with juice, 1/2 cup
  • Chicken stock, 1 1/2 cups 
  • Salt and pepper (to taste)


Step 1

In a saucepan, heat olive oil and prepare Ranchero Sauce. Stir in onions, garlic, celery, and peppers. Sauté for 3 to 4 minutes.

Step 2

Sauté for 3 minutes with thyme, bay leaf, red chili flakes, cilantro, tomatoes, and olive oil. Add chicken stock and simmer for a few minutes.

Step 3

Stir occasionally while simmering for 20 to 25 minutes over low heat. Sprinkle with salt and pepper. Set aside.

Step 4

Prepare grill pan by preheating it. Drizzle chicken breasts with olive oil, salt, and pepper. Cook chicken breasts in a grill pan until they are cooked through.

Step 5

In a baking dish, place chicken breasts and drizzle with Ranchero Sauce. Add cheese to each breast. Then bake at 350 degrees for 8-10 minutes.

Step 6

Transfer to a warm platter or serving plate. Arrange cilantro sprigs on top.
