Ingredients

  • All-Purpose Flour, 3 Cups 
  • Baking Powder, 2 teaspoon
  • Kosher Salt, 1 teaspoon
  • Ground Cinnamon (Divided), 1-1/4 teaspoon
  • Ground Nutmeg, 1/4 teaspoon
  • Unsalted Butter (Melted and Cooled), 2 Sticks Sugar (Divided), 1 Cup + 1 tablespoon 
  • Vanilla Extract, 2 teaspoon
  • Almond Extract, 1/4 teaspoon
  • 3 Large Eggs
  • Semi-Sweet Chocolate Chips, 1 Cup 
  • Coarsely Pecans (Chopped), 1/2 Cup
  • Walnuts or Slivered Almonds, ½ Cup

Instructions

Step 1

In a medium bowl, whisk together 3 cups all-purpose flour, 2 teaspoons baking soda, and 1 teaspoon kosher salt. Combine well. Add 1 tbsp. Of ground cinnamon and 1/4 tsp. Of ground nutmeg.

Step 2

In the bowl of an electric mixer, combine 1 cup of melted butter, 1 cup of sugar, 2 tsp of vanilla extract, and 14 tsp of almond extract. Mix at medium speed for about 5 to 7 minutes, until finely combined. 

Step 3

Beat 3 eggs on medium speed for 2 to 3 minutes or until they are thickened and pale yellow in color. 

Step 4

Mix the dry ingredients now. Mix on low speed until well combined. Add 1 cup of semi-sweet chocolate chips, 1/2 cup of chopped walnuts, and 1/2 cup of chopped pecans. 

Step 5

Keep the bowl in the refrigerator by covering it with plastic wrap. Allow to chill for 2 hours or until it becomes firm. Preheat the oven to 350 degrees F and position both racks in the center. 

Step 6

Prepare two baking sheets by lining them with parchment paper. Remove the bowl from the refrigerator. Prepare a clean flat surface by lightly dusting it with flour and forming the dough into two logs.

Step 7

Place the dough logs on the prepared baking sheet and bake for 25 minutes or until they are light golden brown. Place the baking sheets on the cooling rack to cool. 

Step 8

After 15 minutes, let them cool. Turn the heat down to 250 degrees F and heat them. 

Step 9

When the baked logs have cooled, place them on a cutting board and cut them diagonally into 3/4″ thick slices. Spread cinnamon-sugar mixture on both sides. 

Step 10

Removing them from the baking sheets and placing them back on the baking sheets, bake for 40 minutes to 45 minutes, or until golden and crisp. Remove them from the heat and allow to cool. Enjoy!

Step 11

You can keep them at room temperature for up to three weeks in an airtight container. You can keep them in the refrigerator for up to two months.
