  • Olive oil, ¼ tablespoons 
  • Salt
  • Cracked black pepper, ½ tablespoons 
  • Ground cumin, ½ tablespoons 
  • Ground coriander (optional), ¼ tablespoon 

Step By Step Instructions To Make Elk Roast 

Step 1

Massage the salt and spices into the roast after coating it with oil.

Step 2

Prepare the smoker if you intend to use it. Smoking is best done at 200°F and no hotter than 250°F. You can choose the wood you want to use. Set your oven to 225°F if you are using one.

Step 3

Insert a probe thermometer into the thickest part of the roast before placing it in the oven or smoker. The ideal internal temperature for a roast of this size is 110°F to 120°F. It may take up to 3 hours to reach, but usually, it takes only a few hours.

Step 4

Once you reach that temperature, remove the roast and set it on a cutting board. Take the thermometer off. You can either increase the temperature of your oven to at least 500°F or get a pizza oven or grill going. Even 600°F is not a lot of heat.

Step 5

Place the roast back in the screaming hot oven or grill (cover the grill if that’s what you are using), and roast for 10 to 15 minutes. If you reach 600°F, it may only take 6 minutes. You’re looking for a nice, browned crust.

Step 6

Put the roast back on the cutting board and let it sit for a while. Place the thermometer in the same hole, ideally. 

Step 7

Ensure the internal temperature reaches at least 127°F and no higher than 145°F. A minimum of 10 minutes and a maximum of 30 minutes are acceptable. Enjoy!
