Calxton Fruit Cake Christmas

Ingredients

  • Whole red candied cherries, 1-1/2 cups
  • Whole green candied cherries, 1-1/2 cups
  • Candied pineapple (diced), 3 cups
  • Walnut halves, 1 pound 
  • Golden raisins, 10 oz
  • Shortening, 1 cup
  • Sugar, 1 cup
  • 5 large eggs
  • Vanilla extract, 4 tablespoons
  • All-purpose flour, 3 cups
  • Baking powder, 3 teaspoons
  • Salt, 1 teaspoon

Instructions

Step 1

Preheat the oven to 300°. Mix the fruit and nuts together. Combine the shortening and sugar in a separate bowl. Stir in the eggs and vanilla extract.

Step 2

Mix flour, baking powder, and salt into the creamed mixture. Pour over fruit and nuts and stir well.

Step 3

Place in a greased and floured 10-inch tube pan. Bake this for about two hours or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes.

Step 4

Place on a wire rack to cool completely. Bring the dish to room temperature before cutting.
