Chicken Chesapeake Recipe Instructions

Preparation Before the Stuffing:

Step 1: Preheat your oven to 375 degrees and lightly grease a 9-by-13-inch baking dish with either olive oil or cooking spray.

Step 2:  In the meantime, cook your bacon in a large skillet over medium-high heat, turning it once or twice until it starts to crisp up.

Step 3:  Once your bacon is done cooking, remove it from the pan and drain it on paper towels.

Step 4:  Do not remove the bacon grease from the pan because you will use it to cook the chicken after it has been stuffed.

Step 5:  Now we’re ready to make the filling, so take a medium bowl and combine cream cheese, sour cream, Worcestershire sauce, lemon juice, and salt.

Step 6:  Gently fold in the lump crabs until just combined with the mixture.

Step 7:  Now you want to season your chicken breasts with Old Bay seasoning on both sides.

Step 8:  Using a paring knife, we carefully cut a pocket that is 2 inches long by 1 inch wide into the center of each chicken breast after it has been seasoned.

Cooking and Stuffing Instructions:

Step 1:  Fill each pocket of each chicken breast with two to three tablespoons of crab mixture.

Step 2:  Tuck the top back over the filling and secure it using toothpicks, repeat until all of your chicken breasts have been stuffed.

Step 3:  Now, heat the pan with the bacon grease you reserved on medium-high heat.

Step 4:  Place your stuffed chicken breasts in a pan and cook for about 3 minutes on each side or until they are browned.

Step 5:  After your chickens have cooked for 3 minutes, remove them from the pan and place them in the greased baking dish that we prepared earlier.

Step 6:  Sprinkle cheddar cheese and bacon crumbles over each chicken breast.

Step 7:  Place the chicken into the oven and let it bake for about 25 to 30 minutes, or until it is fully cooked (Tip: You can tell when the chicken is cooked when its internal temperature reaches 165 degrees Fahrenheit).

Step 8:  Let it cool for 5 minutes before slicing and serving.

  • Italian bread crumbs, 1/2 cup
  • Fresh jumbo lump crabmeat, 1/4 cup
  • Extra virgin olive oil, 3 tablespoons
  • Homemade Or prepared marinara sauce, 1/2 cup

Italian Chicken Chesapeake Instructions

Step 1: Preheat the oven to 375 degrees, then place the chicken breast with the smooth side down on a cutting board.

Step 2:  Remove the small inner filet, the tender, by removing any consecutive tissues with a large chef’s knife.

Step 3:  Turn the chicken breast over and, holding the knife parallel to the cutting board, start cutting down the length of the side of the breast.

Step 4:  Next, carefully cut the chicken breast in half along the opposite edge.

Step 5:  Once the breasts have been cut, they should be opened like a book along the fold and covered with a piece of plastic wrap.

Step 6:  Using a meat tenderizer, pound the chicken breast until it reaches the desired thickness.

Step 7:  Now it’s time to stuff the chicken breast with mozzarella cheese, spinach, and crabmeat.

Step 9:  Next, in shallow dishes, spread breadcrumbs on the outside of the chicken breast and gently coat it.

Step 10:  Pour olive oil into a medium oven-proof skillet and heat it over medium heat.

Step 11:  Place the chicken in the heated skillet and cook on each side for 5 to 7 minutes, until the chicken is just beginning to brown.

Step 12:  Transfer the skillet to the oven and bake for about 10 to 15 minutes, or until the chicken is done but still tender.

Step 13:  Next, spoon the marinara sauce onto a serving plate. After that, remove the chicken from the skillet and place it on a cutting board.

Step 14:  Slice the chicken on an angle into three or four pieces.

Step 15:  Place the chicken pieces on top of the marinara sauce on a serving plate and serve immediately.

How to make Chicken Chesapeake Crab Imperial and spinach wrapped in puff pastry

The Chicken Chesapeake Crab Imperial is a white meat dish that’s wrapped in puff pastry. The spinach is then wrapped around this dish and baked until it’s golden brown and crispy. The ingredients are then served with a side of melted butter or cream sauce for dipping. This dish is a twist on the traditional crab imperial. It’s a great dish for entertaining as it can be made ahead of time and reheated just before serving.

Chicken Chesapeake Crab Imperial and spinach wrapped in puff pastry

  • lump crabmeat, 1 lb
  • Baby spinach, 8 oz
  • Roasted red peppers, 2 oz (optional)
  • Large egg, 1
  • Sugar, 1 teaspoon
  • Mayonnaise (Hellman’s preferred), ½ cup
  • Old bay, 1 teaspoon
  • puff pastry dough (defrosted), 2 sheets
  • Large egg (lightly beaten), 1

Lemon Horseradish Sauce

  • Unsalted butter, 1 tablespoon
  • Flour, 1 tablespoon
  • Heavy cream, ½ cup
  • Chicken stock, 1 cup
  • Prepared horseradish, 1 tablespoon
  • Juice of one half lemon
  • Pinch of black pepper

Chicken Chesapeake Crab Imperial and spinach Instructions

Preparation Before Cooking:

Step 1: Trim and pound the chicken breasts until they are thin; they should almost double in size.

Step 2: Pour a little water into a pan and cook the spinach until it is completely wilted.

Step 3: Squeeze out all the water from the cooked spinach after it has finished cooking.

Step 4: Mix together mayonnaise, egg, sugar, and old bay, and then blend well, so now you have your imperial sauce.

Step 5: Take crabmeat, spinach, and roasted peppers and mix them well together if you intend to use them.

Step 6: Add the imperial sauce and mix evenly, but be careful not to add it all at once because the amount of sauce may be too much for your mix. Your mix should remain loose, but not too much.

Step 7: Let the mixture chill for 30 minutes so that it will be easier to work with.

Step 8: Place the chicken breast on a tray and divide the mixture among the four breasts after the mixture has rested.

Step 9: Using the crab meat mixture as a filling, wrap the breasts around it, tucking in all the sides until you get a nicely shaped ball.

Step 10: Place the stuffed chicken in a casserole dish, seam side down, and cover with water or chicken stock to keep it moist.

Cooking and wrapping the Chicken Chesapeake:

Step 1: Cover it with foil and bake it at 350 degrees for about 20 minutes.

Step 2: When your chicken is cool enough, roll out your puff pastry dough so that it is thinner and larger. You want to end up with four eight-inch squares.

Step 3: Place the cooled chicken breast in the center of the puff dough, then wrap the dough around the breast, sealing it under the breast.

Step 4: At this point, you can refrigerate the chicken and bake it later in the day.

Step 5: Make sure you brush the dough with beaten egg before baking and then bake it at 350 degrees for about 20 minutes until you see that it is golden brown.
