Ingredients
- Lump crabmeat (drained), 1/2Cup
- Parmesan cheese (shredded), 2 Tablespoons
- Green onion (chopped) 2 Tablespoon
- Butter (melted) 1 Teaspoon
- Beef tenderloin steaks, 2 (6 oz each)
- Salt, ¼ Teaspoon
- Pepper, 1/8 Teaspoon
Instructions
Step 1
In a small bowl, mix crabmeat, cheese, onions, and butter.
Step 2
Sprinkle salt and pepper over steaks. Cut slits across steaks about half an inch apart. Form a pocket on the other side. Stuff with 1/2 cup crab mixture. If necessary, secure with string.
Step 3
Four inches of broiling. On each side, cook the meat for 7-9 minutes, or until the desired doneness is reached (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). After cooking, let the meat stand for 5 minutes before serving.
