How to make a Gladys Knight Sweet Potato
This recipe is so delicious and not too difficult either. The hardest part is waiting for it all to cool down before you eat it! Let me tell you how easy this recipe is if you want to give it a go yourself.
Ingredients
Base layer:
- Graham Cracker Crumbs, 1 and 1/4 cup
- White Sugar, 1/4 Cup
- Melted Butter, 1/4 Cup
Middle layer:
- Sweet Potatoes, Two Pounds
- White Sugar, 1/2 Teaspoon
- Softened Cream Cheese, Three Packages
- Sour Cream, 1/3 Cup
- Heavy Whipping Cream, 1/4 Cup
- Eggs, Three
- Packed Brown Sugar, 3/4 Cup
Topping:
- Butter, 1/4 Cup
- Heavy Whipping Cream, 1/4 Cup
- Chopped Pecans, One Cup
Instructions
Step 1:
Preheating the oven to 350 degrees Fahrenheit is a good idea. Melt 1/4 cup butter or margarine with the graham cracker crumbs in a mixing bowl.
Press the mixture into the bottom of a 9 1/2-inch springform pan using a small bowl or spatula. Let cool for 10 minutes and set aside. Start the oven.
Step 2:
Place the potatoes in a baking dish. You should bake it for about an hour, or until a knife easily passes through the center. Sweet potatoes should be cooled to the point that they can be handled before they are peeled and pureed.
Step 3:
Make an even mixture by mixing 3/4 cup of white sugar, 2 tablespoons of white sugar, and the cream cheese. Add the eggs one at a time, mixing well after each addition. Make your own sweet potato puree by combining sweet potato puree, sour cream, and 1/4 cup cream. Place the filling in the crust.
Step 4:
Bake for one hour at 350 degrees F or until a tester inserted near the center comes out clean (the center may still be jiggly). Turn off the oven. Let the cake sit in the oven with the door ajar for 1 hour.
Step 5:
In a heavy small saucepan, combine brown sugar and 1/4 cup butter or margarine. Mix constantly over low heat until sugar dissolves. Cook for a few minutes over high heat.
Followed by 1/4 cup cream and nuts. The heated topping should be poured over the cheesecake and spread evenly. If desired, serve with ice cream or hot cocoa. The remaining sweet potato cheesecake can be stored in the freezer.
