1 tablespoon Vegetable Oil ½ cup Onion (minced) ½ cup Poblano Pepper (diced) 3 cups Soup Broth (Chicken or Vegetable) 4 corn Tortillas 1 tablespoon Garlic (minced) 2 teaspoon Jalapenos (seeded and diced) ½ teaspoon Cumin 1 teaspoon Chili Powder 2 cups Canned Fire-Roasted Tomatoes (diced) ½ cup Tomatoes (crushed) 1½ cup Shredded Chicken ½ cup Monterey Jack Cheese (shredded) (Optional) Tortilla Chips, Crushed (Optional)
Add the oil, onions, and poblanos to a soup pot and sauté for 5 minutes over medium heat.
Stir in the garlic, jalapeno, cumin, and chili powder. Continue to cook for 5 minutes more.
Combine the soup broth with the tortillas in a blender. Puree until almost smooth.
Bring the mixture of tortillas and broth to a boil, then add the fire-roasted tomatoes and crushed tomatoes.
Reduce heat and add the spice mixture and shredded chicken. Cook on medium-low heat for 15 minutes.
Add the crushed tortilla chips and Monterey Jack cheese for garnish and season to taste.
