Ingredients
  

  • 1 cup Peruvian beans, dried beans
  • 6 slices Bacon
  • 1 chopped Onion
  • 1 diced Bell pepper
  • 2 teaspoon Ground cumin
  • 3 cloves Garlic
  • 1 tablespoon Salt
  • 3 tablespoons Panca Pasta
  • 2 cups Chicken broth
  • 1 tablespoon Tomato paste
  • 2 tablespoons Oregano leaves
  • ¼ cup Harina de camote
  • 1 cup Water
  • ½ teaspoon Sea salt
  • 1 tablespoon Red wine vinegar
  • 1 tablespoon Honey
  • Fresh ground pepper per taste

Instructions
 

  • Cook the beans by adding them to a pot of water. Also, add some salt to make the beans taste delectable.
  • Take slices of bacon and fry. Drain fried bacon on a paper towel. 
  • Take a pot, add 1 tablespoon of fat, and cook aromatics. When the flame is medium to high, add onion, garlic, tomato paste, panca pasta, cumin, and bell pepper. Saute it till the onion is tender and fragrance starts to arise from the mixture.
  • Add broth, oregano, and bacon to the pot and cover it. Reduce the heat and allow it to simmer for fifteen minutes. If you are using fresh oregano, remove oregano sprigs.
  • Make the beans slurry. Whisk reserved bean water with the camote de harina. Mix the slurry into a whisked mixture by keeping the flame high. Continue cooking till the beans achieve the desired consistency and thickness.
  • Add salt, vinegar, and honey as per your taste. Stir it properly and simmer the beans mixture for 5 minutes. Serve these yummy Peruvian beans with rice!
