4 tablespoons Fresh basil (roughly chopped) 8 oz Spaghetti (cooked, cooled) 1 tablespoon olive oil 3 oz Tomatoes (canned, diced) 2 tablespoon olive oil 2 Garlic cloves (minced) 4 oz button Mushrooms (canned, drained, sliced) Salt and ground black pepper, to taste ½ teaspoon Cayenne pepper To serve: Basil leaves (fresh, torn) Parmesan cheese (grated or powdered) Garlic bread
In a bowl, combine basil and 1 tablespoon of olive oil. Place aside.
In a large skillet, heat the remaining olive oil and saute garlic for 1 minute.
Stir in the mushrooms and cook for a few minutes.
Then, add basil sauce, cayenne, and tomatoes. Saute for a few minutes.
Turn down the heat to low and simmer for about five minutes until slightly reduced.
Toss the pasta into the sauce. Season with salt and pepper to taste. Depending on your taste, adjust the seasoning.
Add parmesan cheese and fresh basil leaves to the pasta. Served with garlic bread.
