  • 1 1/2 cups fresh spinach washed and chopped
  • Salt to taste
  • 1 3/4 cups sharp cheddar cheese shredded
  • 1 tablespoon garlic powder
  • 4 large eggs
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup Cilantro Optional

Preheat the Oven:

  • Preheat your oven to 450°F (232°C).

Sauté the Onions:

  • Prep your onions by peeling and thinly slicing them.
  • Choose a skillet or large frying pan with a flat bottom. A non-stick pan works well.
  • Heat the pan over medium heat.
  • Add a combination of unsalted butter and olive oil to the pan. The butter adds richness, while the olive oil prevents it from burning.
  • Let the butter melt and coat the pan.
  • Place the thinly sliced onions in the pan.
  • Sprinkle a pinch of salt over the onions to draw out moisture and enhance flavor.
  • Stir the onions occasionally to prevent sticking.
  • Cook the onions over medium-low heat. The slow cooking process allows the natural sugars in the onions to caramelize gradually.
  • The onions will soften, release moisture, and start to turn golden-brown.
