Fall is a time full of crisp apples, cozy sweaters, and warm mugs of cider. So why not incorporate that into your breakfast as well? These Apple Cider Pancakes are perfect for those chilly mornings and will definitely satisfy any cravings you might have for something sweet and delicious. In this recipe, we’ll be using freshly pressed apple cider to give these pancakes that signature fall flavor. So let’s get started!
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon.
In a separate bowl, whisk together the apple cider, milk, eggs, vanilla, and melted butter.
Pour the wet ingredients into the dry ingredients and whisk together until just combined. Don’t overmix, or the pancakes will be tough.
Let the batter rest for about 10 minutes to thicken and activate the baking powder.
Heat a non-stick pan or griddle over medium heat.
Lightly butter the pan/griddle and begin cooking the pancakes in batches. Depending on the size of your pan/griddle, you can probably make 2-4 pancakes at a time.
Cook the pancakes for about 2-3 minutes or until bubbles start forming on the surface and the edges start to set.
Flip the pancake and cook for another 1-2 minutes until golden brown.
Continue cooking the remaining batter until all the pancakes are done.
