Ingredients
  

  • 1 1/2 cups Whole red candied cherries
  • 1 1/2 cups Whole green candied cherries
  • 3 cups Candied pineapple diced
  • 1 lb Walnut halves
  • 10 oz Golden raisins
  • 1 cup Shortening
  • 1 cup Sugar
  • 5 large eggs
  • 4 tbsp Vanilla extract
  • 3 cups All-purpose flour
  • 3 tsp Baking powder
  • 1 tsp Salt

Instructions
 

  • Preheat the oven to 300°. Mix the fruit and nuts together. Combine the shortening and sugar in a separate bowl. Stir in the eggs and vanilla extract.
  • Mix flour, baking powder, and salt into the creamed mixture. Pour over fruit and nuts and stir well.
  • Place in a greased and floured 10-inch tube pan. Bake this for about two hours or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes.
  • Place on a wire rack to cool completely. Bring the dish to room temperature before cutting.
