This Cheddars Honey Dijon Chicken Recipe is one of my favorites. It’s simple, delicious, and perfect for a family dinner or a quick weeknight dinner. It’s a great recipe to use in a pressure cooker, and it’s a delicious way to use up a summer’s worth of honey.
Prepare the chicken by pounding it to a thickness of 3/4 inch. Add the dried herbs, garlic powder, salt, and pepper to the chicken.
Make sure the chicken pieces are well coated with the seasoning by rubbing them. It will add flavor and seasoning to the mustard mushroom chicken dish.
Over medium-high heat, cook chicken for about 5 minutes per side until it reaches 165°F. Lower the heat if the chicken browns too quickly.
Cover the skillet with a towel to keep the chicken warm. Continue to cook the mushrooms in the same skillet, turning them frequently, until softened.
Bring the chicken broth, Dijon mustard, and honey to a boil in the skillet; simmer for one to two minutes, stirring constantly, until sauce has reduced by half and has thickened a bit.
You can serve the Dijon chicken and mushrooms with wilted spinach and rice, if desired.
