Ingredients
  

  • 4 tablespoons Unsalted butter
  • 1 small yellow onion finely diced
  • 3 cups Frozen broccoli florets
  • 3 tablespoons All-purpose flour
  • 2 cups Chicken stock or broth
  • ½ cup Carrots (cut julienne style)
  • ½ teaspoon Salt or to taste (you may need less depending on how salty your chicken stock is)
  • ½ teaspoon Pepper or to taste
  • ½ teaspoon Paprika
  • ½ teaspoon Garlic powder
  • 8 onces Shredded cheddar cheese
  • 1 ½ cups Half and half or whole milk

Instructions
 

  • Melt the butter in a large pot and saute the diced onion until translucent.
  • Add one cup of chicken stock then whisk in the flour. Reduce the heat to low.
  • Garnish with salt, pepper, paprika, and garlic powder.
  • Add the remaining half and half, the cheddar, and the chicken stock. Stir well to combine.
  • Broccoli and carrots can be added now. Simmer the soup for 30 minutes, stirring occasionally.
