Ingredients
  

  • 1 cup unsalted almond butter
  • 1 cup Ripe bananas (Mashed)
  • ½ cup Pumpkin puree
  • 2 Organic large eggs
  • ½ teaspoon Baking soda
  • ¼ teaspoon Fine Celtic salt or sea salt
  • 1 tablespoon Pumpkin Pie Spice
  • 1 ½ teaspoons Alcohol-free vanilla extract
  • 1 cup Dark chocolate chips (optional)

FOR CRUMBLE TOPPINGS:

  • Organic banana chips (homemade or store-bought)
  • cup Walnuts (finely diced)
  • cup Chopped pecans
  • 1 ½ teaspoons Organic alcohol-free vanilla extract
  • ½ tablespoon Coconut oil (melted)

Instructions
 

  • To begin, prepare the crumble topping. This can be done by finely chopping the pecans, walnuts, and banana chips. Add the chopped items to a medium-sized glass bowl. Then add 1/2 teaspoon melted coconut oil. Next, add the chopped pecans, walnuts, and banana chips. Combine with the vanilla extract and coconut oil in a large bowl. Simply toss the ingredients together to achieve the plain coating. Put the bowl aside for later use.
  • Preheat the oven to 350 degrees Fahrenheit.
  • In a blender, mix butter, bananas, pumpkin puree, eggs, baking soda, salt, pumpkin pie spice, and vanilla extract for 5 minutes or until batter is formed. Mix in chocolate chips, and fold well. 
  • Pour the batter into a non-stick bread pan. Slowly sprinkle the crumble mixture over the batter. 
  • In the preheated oven, place the bread pan and set the timer for 40 minutes. To check if it's done, insert a wooden skewer into the center. If the skewer comes out clean, then organic banana bread is done. If the batter sticks to the skewer, continue baking for 5 minutes more. Keep checking until it is done. 
  • After removing the banana bread from the oven, let it cool completely in the pan before slicing.
