Ingredients
- Chicken, 1/2 pound (or Chicken Breasts, 2 )
- Olive Oil or Vegetable Oil
- Freshly squeezed juice of lime, 1
- Dried Red Pepper Flakes, 2 tablespoons
- Garlic, 2 cloves (minced)
- Black Beans, 1 can (drained and rinsed)
- Whole Wheat Tortillas (as needed)
- Mexican-Blend Shredded Cheese, One 8-ounce bag
- Salsa (as needed, store-bought or homemade)
- Fresh cilantro, 1 bunch of (chopped)
Instructions
Step 1
Slice up the chicken into small pieces.
Step 2
Cover the bottom of a small skillet with oil. Put it over medium heat.
Step 3
Add lime juice, red pepper flakes and garlic to the hot oil.
Step 4
In the oil, saute the chicken until it starts to turn brown. Then remove the chicken from the skillet. Remove from heat.
Step 5
In the skillet, heat the black beans with the used oil. Alternatively, microwave them.
When Ready to Serve
Step 1
Put a tortilla on a microwave-safe plate.
Step 2
About 2 tablespoons of shredded cheese should be sprinkled on the tortilla.
Step 3
Microwave tortilla for 10 – 15 seconds until cheese is melted.
Step 4
Add cooked chicken, warm black beans, salsa, and cilantro. Wrap into a burrito shape.
Step 5
If desired, serve with sauce and/or salsa.
