In a bowl, add all-purpose flour, cinnamon, salt, and baking soda. Mix them. In another bowl add sugar, light brown sugar, eggs, vegetable oil, and vanilla extract and whisk them well. Make well in the center of the flour mixture and pour oil mixture into it. 

Mix both to make a single mixture and add coconut, mangoes, and pecans. Fold them in the mix. Add this mixture to a sprayed baking pan. Bake in a preheated oven for an hour. Take out, let it cool for a couple of minutes, take out from the pan, slice, and serve it. It takes an hour and 15 minutes to make this delicious mango bread.

To make Mango Bread, you need the following ingredients:

  • All purpose flour = 2 cups
  • Light brown sugar = ¼ cup
  • Brown sugar = ¾ cup
  • Baking soda = 2 tsp
  • Chopped mango = 2 cups
  • Ground cinnamon = 1-½ tsp
  • Eggs = 3
  • Vanilla extract = 1 tsp
  • Vegetable oil = ¾ cup
  • Shredded coconut = ⅔ cup
  • Chopped pecans = ½ cup

Step-by-Step Guide for Making Mango Bread Recipe

Follow this step-by-step guide to make Mango Bread:

Step 1

Preheat your oven to 350 degrees Fahrenheit. Take a loaf pan and spray it with non-stick baking spray. 

Step 2

Take a large bowl and add baking soda, all-purpose flour, salt, and cinnamon. Whisk them well to combine. Then make a well in the center of this dry flour mixture.

Step 3 

Take another bowl of medium size and add vegetable oil, vanilla extract, light brown sugar, sugar, and eggs in it. Mix them by whisking and keep mixing until all the ingredients have turned into a single mixture.

Step 4

Pour this oil mixture into the well you previously made in the center of the flour mixture. Then stir so that both the mixtures incorporate into each other and make a single mixture.

Step 5

Then add shredded coconut, chopped mangoes, and pecans to this mixture and fold them inside the mixture so that they are spread evenly throughout.

Step 6

Transfer the mixture to the sprayed or greased loaf baking pan. Bake in the preheated oven for 60 minutes. Or you can assess the color of the bread and use a toothpick to tell if the bread has been perfectly baked or not. If the toothpick comes out clean, it’s time for the bread to come out of the oven.

When the level of doneness has been achieved, take out the bread from the oven and leave it unbothered for a few minutes to let it settle. Then invert the pan and take out the mango bread.

  • If you do not have baking spray, don’t worry, just grease the pan with oil and flour it.
  • You can also use butter in place of vegetable oil.
