Do you know how we just recently got into the chili craze? Here’s a recipe for you! We love our hotdogs and hamburgers, but we don’t love them so much in the winter when we don’t want to heat up our house with an oven. We like to have a good selection of chili recipes, but this one is my favorite. I made this chili with my son’s favorite brand of chili, and we loved it. The flavor was great and it was a cinch to make.

How to make a Carroll Shelby Chili

Everyone loves a good Carroll Shelby Chili Recipe. They are normally a lot more simple than they appear. A lot of people simply put some ground beef, beans, and pepper in a pot. It’s relatively simple. If you’re going to make chili, the only thing you need to do is to fry the meat, add the beans, and put some salt and pepper on top.

Ingredients

  • Thick-cut bacon, 6 slices (cut into 1/4-inch pieces)
  • Beef chuck roast, 1 (3-pound) (cut into 1-inch pieces)
  • Salt, 2 teaspoons 
  • Freshly ground black pepper, 1 teaspoon 
  • Bottle dark beer, 1 (12-ounce) (or substitute extra beef broth)
  • Coconut oil, 2 tablespoons (or other vegetable oil)
  • Yellow onions, 2 small (diced)
  • Garlic, 7 cloves (smashed and roughly chopped)
  • Anaheim pepper, 1 (seeded and stemmed, finely diced)
  • Jalapeño pepper, 1 (seeded and stemmed, finely diced)
  • Tomato paste, 2 tablespoons 
  • Petite diced tomatoes, 1 (14.5-ounce) can 
  • Beef broth, 2 cups 
  • Cocoa powder, 2 tablespoons
  • Carroll Shelby’s® Original Texas Chili Kit, 1 
  • Chopped cilantro, for serving
  • Grated cheddar or Monterey Jack cheese, for serving
  • Sour cream, to taste, for serving
  • Tortilla chips, for serving

Instructions

Step 1

Set aside beef after seasoning with salt and pepper.

Step 2

Cook bacon in a large Dutch oven over medium heat, stirring occasionally, until fat renders and bacon is crisp about 8-10 minutes. Transfer bacon to a plate lined with paper towels using a slotted spoon.

Step 3

Sear the beef in batches until both sides are well browned, about three to four minutes per side. Transfer to a bowl and set aside.

Step 4

Scrape all of the browned bits from the bottom of the pot with beer (or extra broth). After simmering and reducing the liquid by half, pour the contents of the Dutch oven into the bowl over the beef.

Step 5

When the oil is hot, add the onions to the Dutch oven. Continue stirring until the onions are translucent and soft. Add the garlic and peppers and continue to cook for 3-4 minutes. Add the tomato paste and continue to cook for 2 more minutes. Chili Kit Spice and Seasoning Packets, diced tomatoes, beef broth, and cocoa powder should be mixed together. 

Stir in the Masa Packet if you want a thicker chili. Whisk well. Continue cooking for another 2-3 minutes.

Step 6

Back in the pot, add the beef and bacon. Stir occasionally while cooking over medium-low heat for 3 hours or until beef is tender.

Step 7

Chop cilantro, grate cheese and serve with sour cream and tortilla chips.
