Smoked Sweet potatoes are a super simple, yet tasty, way to use up leftover sweet potatoes. They’re great as a side dish, but they taste fantastic as a main course. They’re even better if you set the smoker to 250°F and let them cook for 2 hours.
Get your smoker ready by preheating it to 250 degrees.
Make sure your sweet potatoes are clean and dry. Make sure all sides are pierced with a fork. Drizzle olive oil over the sweet potatoes, and rub it all over.
Using the salt, season the sweet potatoes all over.
Fork-pierce the potatoes evenly with a fork after smoking them for 2 hours with the lid closed. The internal temperature of a perfectly cooked sweet potato is 210 degrees Fahrenheit, so keep your potatoes between 205-215 degrees Fahrenheit.
Whisk the salted butter, maple syrup, and cinnamon together in a small bowl. Separately set aside.
Put your sweet potatoes on a serving platter, split them open with a knife, fluff the insides with a fork, and drizzle with maple cinnamon butter.
