Red Robin Ensenada Chicken Recipe

After the holiday break, it is time to start cooking meals again. This extreme recipe of the red robin is one of the most popular enchiladas in South America. It was also once a recipe called Ensenada in the original Spanish language. In the culinary world, Ensenada is traditionally made with chicken; this version is made with red robin chicken. This is a very easy recipe to make at home with just a few ingredients so anybody can enjoy this yummy dish.

Ingredients
  

  • 2 tsp Salt
  • 3 tbsp chili powder
  • 2 tbsp Cumin
  • 2 tbsp Paprika
  • 1 tbsp Onion powder
  • 1 tbsp Garlic powder
  • 1 tbsp Oregano
  • 4 Chicken breasts (Thin cut)
  • 1 tbsp Olive oil
  • Ranch salsa, lime Wedges (for serving)
  • Josie’s Organics Southwest Salad Mix

Instructions
 

Step 1

  • Mix all spices together in a bowl.

Step 2

  • Put a generous amount of spice mixture on 4 thinly cut chicken breasts.

Step 3

  • Heat olive oil on medium heat in a large frying pan. Saute the chicken until it is cooked through, about 4-5 minutes on each side.

Step 4

  • You can serve this recipe with Josie’s Southwest Salad, salsa, ranch, and lime wedges.

Step 5

  • If any remain, store them in an airtight container.
