2 red onions peeled and roughly chopped 1 head of garlic cloves peeled and roughly chopped 1 cup African bird's eye chilies stem removed 2 red bell peppers seeds were removed and roughly chopped 3 ripe tomatoes skins were removed and roughly chopped 4 tablespoons olive oil juice and zest of 3 lemons ⅓ cup red wine vinegar 2 tablespoons sugar 1 tablespoon salt 1 teaspoon cracked black pepper 2 bay leaves 1 tablespoon dried oregano 1 tablespoon smoked paprika
In a food processor or blender, combine all ingredients and blend until finely chopped and sauce-like.
Pour the sauce into a saucepan over medium heat and simmer for 20 minutes, stirring occasionally to prevent burning.
Check the seasoning after 20 minutes and adjust as necessary. Lemon and vinegar should provide a sourness and spice to the sauce.
For up to two weeks, keep in the refrigerator in jars or bottles.
