Peri Peri Sauce Recipe 
Peri Peri Sauce is a paste that has a pleasant fruity flavor and is easy to make.It is made by combining hot ingredients such as garlic cloves, cracked black pepper, and smoked paprika. The sauce is usually served with meat, fish, or vegetables as a dipping sauce.

2  red onions peeled and roughly chopped 1  head of garlic cloves peeled and roughly chopped 1  cup  African bird's eye chilies stem removed 2  red bell peppers seeds were removed and roughly chopped 3  ripe tomatoes skins were removed and roughly chopped 4  tablespoons  olive oil juice and zest of 3 lemons ⅓  cup  red wine vinegar 2  tablespoons  sugar 1  tablespoon  salt 1  teaspoon  cracked black pepper 2  bay leaves 1  tablespoon  dried oregano 1  tablespoon  smoked paprika In a food processor or blender, combine all ingredients and blend until finely chopped and sauce-like. 
Pour the sauce into a saucepan over medium heat and simmer for 20 minutes, stirring occasionally to prevent burning. 
Check the seasoning after 20 minutes and adjust as necessary. Lemon and vinegar should provide a sourness and spice to the sauce. 
For up to two weeks, keep in the refrigerator in jars or bottles.
