Ingredients
  

  • 2 tablespoons Unsalted butter
  • 1 yellow onion (minced)
  • 2 cloves Garlic (minced),
  • 1 carton chicken broth or stock about 32 ounces
  • 1 can Cream of chicken about 10.5 ounces
  • 2 cups Shredded rotisserie chicken
  • 1 can Creamed corn about 14.75 ounces
  • 1 can Diced tomatoes are about 14.5 ounces
  • 2 teaspoons Ground cumin
  • 3 teaspoons Chili powder
  • 2 teaspoons Paprika
  • 1 teaspoons Onion powder
  • teaspoon Cayenne powder
  • 1 cup Half and half
  • Salt and pepper to taste

For topping (optional)

  • Sliced avocado
  • Shredded Monterey Jack
  • Tortilla strips
  • Sour cream
  • Pico de gallo

Instructions
 

  • Melt the butter on low in a large pot or Dutch oven, and then add the garlic an
  • Turn the heat up to medium and saute the onions until they begin to brown.
  • After reducing the heat, add the remaining ingredients, excluding the half and half. Combine thoroughly.
  • Cook for about 20 to 25 minutes. Remove from the heat and stir in half and half.
  • You can top the taco with shredded cheese, fresh avocado, tortilla strips, fresh lime juice, and pico de gallo.
