Mamaw Emily's Strawberry Cake is one of the most popular recipes. It’s simple, yet delicious. It's a great way to use strawberries in a more creative way than just adding them to whip cream or ice cream.
Preheat the oven to 350 degrees. Grate the bottoms of two 8-inch cake pans.
Line parchment paper with baking pans. Grease parchment paper.
Mix cake mix, gelatin, sugar, and flour together in a large bowl. Add the water, oil, and eggs and beat until smooth. Continue beating for 2 minutes. Add the chopped strawberries. Pour into the prepared pans.
25-30 minutes is the time to bake until a toothpick inserted in the center comes out clean. Place on wire racks to cool for 10 minutes; remove the paper. Let cool completely
Beat butter until it is creamy in a small bowl. Add crushed strawberries. Add confectioners' sugar gradually until desired consistency is reached. Frost the top and sides of the cake.
