Instructions
Prepare the Lobster Filling
If cooking live lobsters: bring a large pot of heavily salted water to a rolling boil. Add lobsters headfirst, cover, and cook for 10–12 minutes for 1.25 lb lobsters. Transfer to an ice bath immediately to stop the cooking. Once cool enough to handle, crack the claws, knuckles, and tails and extract all the meat.
Pat the lobster meat dry with paper towels to remove excess moisture. Chop into generous, rustic chunks — you want identifiable pieces of lobster, not a fine mince. Refrigerate the meat uncovered on a plate for at least 30 minutes to ensure it is completely cold before dressing.
In a large bowl, whisk together the mayonnaise, fresh lemon juice, lemon zest, Dijon mustard (if using), fine sea salt, and white pepper until smooth and well combined.
Add the cold lobster meat and finely diced celery to the bowl. Using a rubber spatula, fold gently to coat — do not stir aggressively. You want every piece of lobster coated in dressing while maintaining chunky, beautiful pieces. Fold in the chives. Taste and adjust seasoning with additional salt, lemon juice, or mayo as needed. Refrigerate until ready to use.
Toast the Buns
Heat a large skillet or griddle over medium heat. Add the butter and let it melt and foam, swirling the pan to coat evenly.
Place the split-top buns flat-side down in the buttered skillet. Toast for 2–3 minutes until deeply golden and crisp on both flat sides, pressing gently with a spatula. Flip and toast the other flat side for another 1–2 minutes. Remove from heat — the buns should be golden and slightly crisp on the outside and still soft in the center.
Assemble and Serve
Open each toasted bun gently. Spoon a generous, heaping portion of cold lobster filling into each bun — do not be shy, the filling should overflow slightly for the full effect.
Finish each roll with a pinch of flaky sea salt and a few extra snipped chives. Serve immediately with lemon wedges, kettle potato chips, and a cold drink. Do not let these sit — eat them the moment they are assembled.

Lobster tip: For the best texture, always chill cooked lobster meat completely before dressing — warm lobster breaks down in mayo and turns watery. Make ahead: The filling can be prepared up to 24 hours in advance and refrigerated in an airtight container. Toast and assemble buns to order right before serving. Substitution: If New England split-top buns are unavailable, a brioche hot dog bun works well — just trim the sides flat with a serrated knife before toasting.
