Instructions
Cook the Taco Beef
Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks, about 6–7 minutes. Drain excess fat.
Add taco seasoning, water, and lime juice. Stir and simmer for 2 minutes until the liquid is mostly absorbed. Remove from heat and let cool slightly.
Season the Beans
In a bowl, mix the refried beans with cumin, garlic powder, and smoked paprika until well combined. Warm in the microwave for 60 seconds if straight from the can.
Make the Guacamole
Mash avocados in a bowl with lime juice, salt, red onion, and cilantro until mostly smooth with some texture remaining. Taste and adjust seasoning.
Assemble the Layers
Spread the seasoned refried beans in an even layer across the bottom of a 9x13 inch clear glass baking dish.
Spread the cooked taco beef evenly over the beans.
Carefully spread the guacamole over the beef using the back of a spoon or offset spatula.
Spoon the salsa or pico de gallo evenly over the guacamole, draining excess liquid first.
Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the salsa layer.
Reserve about 1/3 cup of sour cream for the web. Spread the remaining sour cream evenly over the cheese layer as the final base layer.
Create the Spider Web
Spoon the reserved sour cream into a small zip-lock bag or piping bag. Snip a tiny corner off the bag.
Pipe 4–5 concentric circles across the surface of the sour cream layer, starting small in the center and working outward.
Using a toothpick, drag lines from the center circle outward through the rings at 8–10 evenly spaced points around the dish to create a spider web pattern.
Add the Spider
Place one whole large black olive in the center-left area of the web as the spider's body.
Arrange 8 thin olive slices radiating outward from the whole olive to form the spider's legs.
Scatter remaining sliced olives around the edges of the dip if desired.
Chill and Serve
Refrigerate for at least 15 minutes before serving to let the layers set. Serve cold with sturdy tortilla chips — scoop-style chips work best for getting all seven layers in one dip.
Notes
Make-Ahead: Assemble all layers up to 24 hours ahead and refrigerate covered. Pipe the spider web and add the olive spider decoration right before serving. Press plastic wrap directly against the guacamole layer if making far in advance to prevent browning. Storage: Cover tightly and refrigerate leftovers for up to 2 days. The guacamole may darken slightly but will still taste great — stir it gently before serving again. Vegetarian Option: Skip the ground beef and replace with a layer of seasoned black beans (drain, rinse, and season with cumin, chili powder, and lime juice). Spice Level: Add a thin layer of pickled jalapeños between the salsa and cheese layers for extra heat.
