Instructions
Load the Crockpot
Place the whole raw chicken breasts or thighs in the bottom of your slow cooker in a single layer.
Add the fire-roasted diced tomatoes (with juices), drained black beans, drained corn, diced green chiles, diced onion, and minced garlic directly on top of the chicken.
Sprinkle all the spices evenly over the top: chili powder, cumin, smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper. Add the tomato paste if using.
Pour the chicken broth over everything. Give the pot a gentle stir just to distribute the broth and spices — don't worry about mixing perfectly, it will all come together as it cooks.
Slow Cook
Place the lid on the slow cooker. Cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the chicken is completely cooked through and easily shreddable.
The soup is ready when the chicken reaches an internal temperature of 165°F and pulls apart effortlessly with two forks.
Shred the Chicken
Use two forks to remove the chicken from the slow cooker and shred it on a cutting board into bite-sized pieces. The meat should fall apart with very little effort.
Return the shredded chicken back to the crockpot and stir it into the broth. Taste the soup and adjust seasoning with additional salt, pepper, or a squeeze of fresh lime juice as needed.
Serve
Ladle the soup into bowls and load up your toppings: crispy tortilla strips, shredded cheese, a dollop of sour cream, diced avocado, fresh cilantro, sliced jalapeño, and a fresh squeeze of lime.
Serve immediately and enjoy every bold, smoky, spiced bite.
Notes
MAKE IT CREAMY: Stir in 4 oz of softened cream cheese or 1/3 cup heavy cream during the last 30 minutes of cooking for a rich, velvety broth. THICKER SOUP: Before returning shredded chicken to the pot, use a potato masher to mash some of the black beans directly in the crockpot — this naturally thickens the broth. STORAGE: Refrigerate leftovers in an airtight container for up to 5 days. The flavor improves overnight. FREEZER: Freeze (without toppings) for up to 3 months in individual portions.
