Ingredients
  

The Hot Dogs

  • 4 Vienna Beef all-beef frankfurters or any all-beef frankfurter with natural casing
  • 4 poppy seed hot dog buns steamed until soft and warm

The Garden Toppings (in order of application)

  • 4 teaspoons yellow mustard do not use Dijon or spicy brown
  • 4 tablespoons neon green sweet pickle relish Chicago-style; Woeber's or Vienna Beef brand preferred
  • 4 tablespoons white onion finely diced
  • 2 medium Roma tomatoes each cut into 4 wedges (2 wedges per dog)
  • 4 dill pickle spears 1 per dog, placed lengthwise alongside the frank
  • 8 sport peppers 2 per dog; substitute pepperoncini if unavailable
  • 1 teaspoon celery salt for finishing — dust lightly over completed dog

Instructions
 

Steam the Buns

  • Fill a medium saucepan with about 2 inches of water and bring to a simmer over medium heat. Place a steamer basket above the water. Add the poppy seed buns to the steamer basket, close the lid, and steam for 1–2 minutes until warm, soft, and slightly pillowy. Alternatively, wrap each bun in a damp paper towel and microwave for 20–25 seconds. Set aside.

Cook the Frankfurters

  • To steam (most authentic): Keep the water in the saucepan at about 180°F — just below a simmer, not a rolling boil. Add the frankfurters to the water (or steamer basket) and heat for 4–5 minutes until plump and heated through. The casing should be tight and snap-ready. Do not boil — it ruptures the casing.
  • To grill: Preheat a gas or charcoal grill to medium-high heat (about 400°F). Place frankfurters directly on grates and cook for 4–6 minutes total, turning every 90 seconds, until grill marks form and the casing is lightly blistered but not split.

Build the Dog — In Order

  • Open each steamed poppy seed bun and nestle the cooked frankfurter inside.
  • Apply yellow mustard: squeeze a thin line along one side of the frank.
  • Spoon 1 tablespoon of neon green relish on top of or alongside the mustard.
  • Sprinkle 1 tablespoon of finely diced white onion over the relish.
  • Tuck 2 tomato wedges against one inner side of the bun, nestled between the bun and the frank.
  • Place 1 dill pickle spear on the opposite side of the frank from the tomato wedges.
  • Top with 2 sport peppers placed directly on top of the frank.
  • Finish with a light dusting of celery salt over the entire assembled dog. Serve immediately.

Notes

KETCHUP RULE: Chicago style hot dogs are never served with ketchup. This is not a suggestion.
BUN TIP: Always steam the bun — never toast it. The soft texture is structural to the eating experience.
INGREDIENT SOURCING: Vienna Beef franks and authentic neon green relish can be ordered online. For sport peppers, check the condiment aisle or substitute pickled pepperoncini.
SERVING: Serve immediately after assembly. Pre-assembled dogs held more than 10 minutes will develop a soggy bun.
STORAGE: Leftover cooked frankfurters can be refrigerated for up to 3 days. Reheat by steaming for 2–3 minutes. Do not store assembled dogs.
