Ingredients
  

Salad

  • 6 cups fresh broccoli florets cut into small bite-sized pieces, from about 2 large heads
  • 8 slices bacon cooked until crispy and crumbled
  • 1 cup sharp cheddar cheese cut into small cubes
  • 1/2 cup sunflower seeds toasted in a dry skillet
  • 1/2 cup red onion thinly sliced, soaked in ice water for 10 minutes and drained
  • 1/2 cup raisins or dried cranberries

Creamy Dressing

  • 1 cup mayonnaise full-fat for best flavor
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons granulated sugar adjust to taste
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper freshly ground

Instructions
 

Cook the Bacon & Toast the Seeds

  • Cook bacon in a large skillet over medium heat until deeply crispy, about 8–10 minutes. Transfer to a paper towel-lined plate and let cool completely, then crumble into chunky pieces.
  • In the same skillet (wiped clean) or a separate dry pan, toast the sunflower seeds over medium heat for 2–3 minutes, stirring frequently, until golden and fragrant. Remove from heat and let cool.

Make the Dressing

  • In a medium bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and black pepper until smooth and fully combined. Taste and adjust sweetness or acidity as needed. Set aside.

Prepare the Broccoli

  • Cut the broccoli into small, bite-sized florets. Place the sliced red onion in a bowl of ice water and let soak for 10 minutes to mellow the sharp bite, then drain and pat dry.

Assemble the Salad

  • In a large mixing bowl, combine the broccoli florets, crumbled bacon, cheddar cubes, toasted sunflower seeds, drained red onion, and raisins.
  • Pour the dressing over the salad and toss thoroughly until every floret is well coated. Taste and season with additional salt and pepper if needed.
  • Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld. Add an extra scatter of bacon and sunflower seeds on top just before serving for presentation and crunch.

Notes

Make-ahead tip: Prep all components up to 24 hours in advance and store separately. Toss with dressing 1–2 hours before serving. Add sunflower seeds right before serving for maximum crunch. Storage: Keeps in an airtight container in the refrigerator for up to 3 days. Does not freeze well. Variation: Swap raisins for dried cranberries, or replace half the mayo with Greek yogurt for a lighter dressing.
