Prepare the sun-dried tomatoes by chopping them. In a large bowl, combine the avocado, onion, cilantro, salt, and lime juice.
Make sure that your corner is facing outward when you turn the egg roll wrappers. Fill the wrapper with one or two tablespoons of filling. Wet the edges and seal the wrapper. Using a pastry brush or your finger, seal the edges.
The corner should be folded tightly over the filling.
The egg roll should be rolled in the same direction, with the two side corners folded in as you roll. Tighten the wrapper around the filling as you roll.
Roll the wrapper over the filling until it is completely enclosed. Arrange the wrapper on a baking sheet lined with parchment paper. Stuff the wrappers with filling until you do not have any more to use.
Oil should be poured into a 2-inch pot and heated to 350 degrees. Rolls should be added to the hot oil three or four at a time. The rolls should be cooked for about three to four minutes.
Allow the egg rolls to drain on paper towels after they have been removed from the oil.
Get the dipping sauce ingredients ready while the egg rolls are frying.
The dipping sauce ingredients should be blended or processed in a blender or food processor.
