We all like spring rolls and sometimes we don’t want to get in the car, go down to a local restaurant and get some. We would rather make them at home. This Easy and Healthy Spring Roll Recipe is a great one and it had minimal ingredients to make these mini burrito like golden wonders.
1 cupscupsShaved cabbage – I use Red but Green will also work
1Medium yellow oniondiced
4garlic cloves minced
1 cupShoestring carrots
Instructions
Dipping Sauce
In a small bowl mix minced garlic, Grated ginger, splash of fish sauce, 2 TBSP avocado oil, 2 TBSP of low sodium soy sauce. Combine and let sit.
Spring Roll Filling
Heat pan to medium heat. Add Turkey to pan with a little avocado oil. Cook until half brown.
While this is cooking down, Shred or fine slice the carrot and cabbage
Add the onion and half of the sauce mixture to the pan with the turkey and cook until the onion is soft, about 10 minutes. You want that sauce to hit everything in the pan so mix it well.
Drain any excess liquid from the pan and transfer the turkey mixture to a large bowl. Let it cool slightly.
Lay out the spring roll wrappers on a clean surface and spoon about 2 tablespoons of the filling on the bottom corner of each wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edges with water. They should look something similar to this:

Air Frying
Preheat the air fryer to 360°F and spray the basket with cooking spray. I use a paper towel or brush to coat the tray with avocado oil. Place the spring rolls in a single layer in the basket, leaving some space between them. Spray them with cooking oil or brush them with egg yolk.
Air fry for 12 minutes, flipping halfway through, until golden and crisp. Cook for about 8 minutes at 380 degrees and flip them about halfway through to make sure all side get browned the same.
Serve the spring rolls after about 5 minutes for cooling with the remaining sauce for dipping.
