Preheat the oven to 375°F. Prepare a 9x9 baking dish by spraying it with oil.
Add salt and pepper to the egg whites in the baking pan. Bake for 25-30 minutes, until the eggs are cooked through.
Cook the turkey bacon while the eggs are baking.
After the eggs are completely baked through, remove them from the oven and allow them to cool completely. Cut into four squares after removing from the pan with a spatula.
Build breakfast sandwiches with an English muffin, an egg white square, a slice of cheese, and turkey bacon (cut in half).
Keep in the fridge in a sealed container or plastic wrap for 3-4 days. To store for longer, you can freeze the sandwiches.
Reheat in a microwave for 30 seconds at a time, or on a sandwich press for a few minutes until crispy and melted.
